All of our pork chops are cut from the loin- so what’s the loin? It’s the area that runs from the shoulder to the hip: the largest, leanest and most tender cut.
All of our chops are cut bone in. The bone helps prevent the meat from drying out during cooking. Remember, this is a lean meat and chops keep their best flavor when cooked quickly to avoid overcooking.
A bit of fat around the bone and around the meat helps keep the pork moist and tasty. Searing this fat cap first when cooking will give you a nice crispy edge.
Rib chops are cut from the shoulder to the middle of the loin (the rib section) these chops have a little more fat than center or loin chops. Similar to beef, fat = flavor. These chops are tender and delicious!
